On a sun-kissed hillside in the heart of Paso Robles’ El Pomar District, our acre of Espadín agave—sourced directly from Mexico—stands as both a tribute to tradition and a bold step into California’s next chapter of craft spirits. Planted in the spring of 2025, each agave is rooted in the same calcareous soils that shape our vineyards, thriving under the region’s unique blend of coastal breezes, cool nights, and warm days. At the heart of the planting, an old oak tree spreads its wide canopy, sheltering a picnic area where guests can relax and take in the sweeping views while surrounded by the striking rows of agave. Visitors are invited to walk amongst the plants, feel the texture of their spiny leaves, and witness their slow, steady growth. With care and patience, this Espadín will spend years drawing character from the land before it’s harvested and transformed into our signature Inspirada Agave Spirits—a living testament to place, patience, and the art of distilling.


Boutique Vineyard
Encircling the villa in a graceful arc, our acre of Grenache Blanc—900 meticulously planted vines—captures the elegance and vitality of the El Pomar District. Planted in 2025, this young vineyard will take three years before yielding its first fruit, a patient journey that mirrors the slow rhythm of the land itself. Rooted in mineral-rich calcareous soils and caressed by the region’s warm days and cooling evening breezes, the vines promise future wines with vibrant acidity, floral aromatics, and a whisper of coastal salinity. Guests can stroll along the rows, watching the shifting light dance across the leaves, and witness each season’s quiet transformations—from tender shoots to the first clusters. More than a backdrop to the villa, this vineyard is a living frame—shaping both the view and the future wines that will express the soul of Vista El Pomar.
Estate Lavender
Spread across a gentle slope at Vista El Pomar, our three-quarters of an acre of lavender—planted over the last two years—features a blend of several varieties, each adding its own shade of purple and unique fragrance. The blooms are among the first sights to greet visitors, lining the drive to the villa with silvery-green foliage and vibrant color. Thriving in the sun-soaked days and cool coastal evenings of the El Pomar District, the lavender invites guests to wander between its rows, brushing fingertips along the stems and listening to the hum of bees. More than a visual delight, it’s a sensory thread woven into the rhythm and character of the estate.

Across Vista El Pomar, century-old oak trees anchor the hillsides with their broad canopies and weathered trunks, lending the estate a timeless presence. A towering cactus greets you as you arrive at the villa, its rare annual bloom a fleeting spectacle of beauty. Around the back patio, olive trees are sprinkled in graceful clusters, while citrus trees nearby offer seasonal bursts of color and fragrance. Together, these plantings—both ancient and new—create a landscape rich in character and rhythm.
